Roasted Veggie Salad with Pomegranate Vinaigrette

You must try this delicious salad featuring Spinach, Roasted Butternut squash and Brussels Sprouts, Grilled Chicken and pomegranate seeds.  This salad is perfect with our pomegranate vinaigrette. 

♦️Featured GOLCHIN Ingredients:

(For Vinaigrette)

-Extra Virgin Cold Pressed Olive Oil (1/4 cup)

-Lemon Juice (2 tbsps) 

-Minab Lime Juice (2 tspn)

-Fresh Ground Himalayan salt and pepper (to taste)

-Pomegranate Molasses (3 tbsps)

-Apple Cider Vinegar (2 tbsps)

 

♦️Salad Ingredients:

-Chopped leftover air-fried chicken breast 

(10 oz) 

  🔻Marinated with lemon juice, olive oil, S & P, Tumeric, paprika, cumin and garlic powder

   🔻Air dry for approx. 12-15 mins at 400 degrees, flipping chicken breasts half way through)

-3-4 cups fresh spinach

-1.5 cup air fired pomegranate molasses Brussels Sprouts (see recipe in previous post and also saved in highlights)

-1.5 cups, Roasted Butternut squash (chopped)

-1/3 Cup Pomegranate seeds

-Mix with dressing and enjoy! 

 

This is a versatile salad which is a perfect side dish or as a healthy main course and a great with our pomegranate vinaigrette, everyone will devour.
